Melisseon Greek Honey founded in 2013 by Asterios Liapis, driven by his interest in a more natural way of living. Beekeeping started as a hobby for him, but fascinated by the world of bees, he quickly developed it to a full-time occupation.

Our greek honey is produced in the mountains of the Northern Thrace, in a truly unspoiled environment away from the urban pollution, in a local ecosystem of extremely dense, aromatic flora of endemic, self-sown flower plants, trees and shrubbery.

Heather, Acacia and wild oregano are but a small fraction of the flora that offers our bees exceptional food for them to produce our greek honey, an all-natural product that excels due to its high nutritional values.

HONEY

Premium Quality Greek Fir Honey

It is of high nutritional value with a characteristic taste, aroma and color. It has high nutritional value, special taste and aroma while its color is unique. Fir honey constitutes 5 – 10% of the honey production of our country. Fir honey is characterized as honeydew honey since it is produced from the honeydew secretions of the fir. Essentially it is the sugary secretions of granules or aphids (meligra) that infest the needle-like leaves of the tree. The production of honeydew takes place in the summer when the temperature rises enough, while a necessary factor is the existence of drought. In case of rainfall, honey production stops. The color of spruce honey varies depending on the region of origin and is from dark or light red to black. It has a high density, which makes it very viscous. The low concentration of sugars contributes to its mild sweetness while its aroma travels to the fir-covered mountain peaks of the areas where it is produced. One of its most important properties is that it never crystallizes, like pine, thanks to its low glucose concentration, below 30%. It is considered one of the best and most delicious honeys. The special conditions required for its production, as well as the remote areas in which the bees are placed, result in its price varying significantly from year to year.

High Quality Greek Oak Honey

The oak, one of the sacred trees of the ancient Greeks, forms rich forests throughout almost all of Greece. The oak or oak, the tree of Jupiter, lives for many years showing exceptional stability and resistance to lightning. Beesart moves its hives to oak forests far away where bees can collect honey undisturbed and away from human pollution. We have chosen for the collection of our honey the well-known oak forest of Foloi at the foot of Erymanthos in Elias and the oak forests next to the rocks of Meteora. Oak honey belongs to the category of honey produced from honeydew, that is, it is honeydew honey. The bark of the oak is infested with insects which secrete a sticky substance, the honeydew which the bees collect and from which they produce the honey. Oak honey can also be found under one of the following names: “black honey”, “honey from a tree”, “meloura” and “acorn honey”.

High quality Greek pine Honey

Pine honey comes from the honey secretions of the insect cotton (Marchalina hellenica) or pine worker. The honey is secreted from June to April but we do not take honey all this time. The tree produces honey for three weeks and then stops, “cuts” for another three and this is repeated for the entire period from June to April. Also, in order for the bees to be able to collect the honey, the relative humidity must be above 65% – 67% and the temperature from 20οC – 21οC. Pine honey has a special and characteristic color which depends on its production period. The color of pine honey is in shades from dark yellow to light brown. Pine honey produced in spring has a lighter color and greater clarity than that produced in autumn. Like honey, it is not very sweet, due to its low glucose content, while its aroma is spicy and unusual, reminiscent of iodine. Pine honey crystallizes slowly, due to its low glucose content, and pure pine honey can remain liquid for a long time, more than a year and a half.

Thyme honey constitutes 10% of the total honey production in our country. It is produced mainly in the Greek islands where thyme thrives and the conditions favor the optimal performance of its characteristics and the excellent development. Beesart transports its bees to isolated locations in Galaxidi, Grammatiko, while this year a part of our bee swarm will travel to the island of Kea. There, away from humans and environmental pollution, hardworking bees collect fine thyme honey. The preference shown by consumers for thyme honey is due to its strong organoleptic characteristics. Its color is amber and bright, which makes it very attractive to consumers.Its taste is sweet and pleasant with a high concentration of fructose, while its aroma is strong and stands out immediately. Thyme honey, although flower honey, is quite resistant to sugaring and crystallizes within 6 to 18 months.
